Sudachi Oil

Description

A specialty product of the Tokushima Prefecture in Japan, Sudachi Oil is steam-distilled from the round lime-like fruits of the Citrus sudachi plant. Sudachi is primarily grown as a companion for matsutake mushrooms, as the vinegar-like juices of the fruit are often considered an essential ingredient when preparing the fungi. The oil derived from sudachi fruits bears a similar flavor to its freshly-squeezed juices, retaining an intensely sharp and citrus-like taste that pairs well with seafood, noodles, and mushrooms. Sudachi oil is also added to sweet products such as ice cream, soft drinks, and flavored alcoholic beverages, providing a sharp and acidic contrast. While sudachi is very well-known in Japan, the fruit has recently expanded into other citrus markets, including Peru and California.
